The all-inclusive Hyatt Ziva Cap Cana has opened The Blind Butcher, an upscale à la carte restaurant inspired by the flavors of South America.
The restaurant is located behind the facade of a 1950s butcher shop, and diners enter through what appears to be a refrigerator door. The five-course meal, priced at $149 per person, is characterized by what the restaurant calls “earth (beef tartare, pork arepas),” “air (crispy oysters, shrimp carpaccio),” “water (Josper sea bass, grilled octopus),” and “fire (Creole barbecue, bone-in tenderloin Malbec).” Musicians and dance performers entertain diners tableside throughout the meal.

The restaurant’s name comes from a South American legend about a chef who, in his quest for new tastes, lost his sight in an accident on the Chilean island of Tierra del Fuego and was forced to rely on his other senses in cooking until a shaman restored his sight later in life.
“The American South is known for its incredibly diverse cuisine, full of color and nuance, as well as its incredibly evocative folklore and intercontinental cultural fusion, and is famous for the world’s best carnival, full of joy and dancing,” said Pedro Tomas, general manager of Hyatt Ziva Cap Cana. “Added to this, our culinary team includes more than 10 different nationalities who, together, bring an exciting rhythm to the palate.”
Thomas said it’s not the resort’s goal to steal attention from other restaurants, such as Brands and Noodles and Threads.
Thomas said: “A key differentiator for The Blind Butcher is that you will find continually top-level entertainment whilst enjoying daring gastronomic offerings with surprise effects that are more experimental and disruptive than other restaurants and will challenge the most adventurous culinary minds.”
Blind Butcher is open daily from 6:30pm to 9pm and the dress code is casual elegant.
